→ Sauce

03 - 3 tablespoons sour cream
04 - 1 tablespoon fresh lime juice

→ Cheese & Seasoning

06 - 1 teaspoon chili powder
07 - 1/4 teaspoon smoked paprika
08 - 1/4 cup fresh cilantro, chopped

# Directions:

01 - Wrap each ear of corn in a damp paper towel and microwave all together on high for 5 to 6 minutes, turning halfway through, until tender. Let cool slightly.
02 - In a small bowl, mix together mayonnaise, sour cream, and lime juice until smooth.
03 - Carefully unwrap the corn and, while still warm, brush each cob generously with the sauce mixture.
04 - Sprinkle crumbled Cotija cheese over the coated corn, pressing gently so it adheres.
05 - Dust with chili powder and smoked paprika, then garnish with chopped cilantro and serve with lime wedges.

# Expert Advice:

01 -
  • It tastes like you spent hours when you actually spent minutes, which feels like getting away with something delicious.
  • The contrast between creamy sauce, tangy lime, crumbly cheese, and that little kick of chili makes every bite interesting.
  • The microwave method means no standing over a hot pot of water, just wrapped corn and patience.
02 -
  • The sauce absolutely must go on while the corn is still warm, otherwise it won't adhere properly and just slides off.
  • Buy whole cotija from a Latin market if possible because pre-crumbled cheese from regular groceries sometimes has odd additives and loses that salty, crumbly texture that makes this dish work.
03 -
  • Always mix your sauce ahead of time so you're not scrambling when the hot corn is ready; those few minutes of prep make the actual assembly feel smooth.
  • If your cotija is very hard and doesn't crumble easily, let it warm to room temperature first or grate it with a box grater instead of trying to break it apart by hand.
