# What You Need:

01 - 1 lb flank or sirloin steak
02 - 1 tablespoon olive oil

07 - 2 cups water

→ Chimichurri Sauce

# Directions:

01 - Preheat the oven to 425°F.
02 - Toss bell pepper, zucchini, red onion, and cherry tomatoes with 2 tablespoons olive oil, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Spread on a baking sheet and roast for 20 to 25 minutes until tender and lightly caramelized.
03 - Rinse rice under cold water. Combine rice, 2 cups water, and 1/2 teaspoon salt in a saucepan. Bring to a boil, then reduce heat to low. Cover and simmer for 15 minutes or until water is absorbed. Remove from heat and let stand, covered, for 5 minutes. Fluff with a fork.
04 - Pat steak dry and rub with 1 tablespoon olive oil, kosher salt, black pepper, and smoked paprika.
